
1. Shred lettuce by rolling up the leaves and, under supervision, use a small knife to slice the lettuce roll thinly. Set aside.
2. To make guacamole, cut avocados in half. Remove the stone and scoop out avocado flesh. Place in a bowl and mash with a fork. Add lemon juice and sour cream. Stir well. Cover and place in refrigerator.
3. To make chicken filling, remove skin and bones from chicken and discard. Using hands, shred chicken into small pieces. Place in a bowl. Place tomato on a chopping board and cut into small pieces. Peel the carrot and grate coarsely. Add tomato and carrot to chicken. Stir in beans.
4. Place taco sauce in a small saucepan. Under supervision, stir the sauce over a low heat until hot. Pour the taco sauce over chicken mixture and mix well with a spoon.
5. Place taco shells on an oven tray. Under supervision, place tray in a moderate oven (180C) for about 7 minutes, or until warm and crisp, then remove from oven.
6. When you're ready to eat the tacos, hold a taco shell in your hand. Place lettuce into the shell, then chicken mixture and cheese. Spoon some guacamole over top. Repeat with remaining mixture.
