1. Process flour, sugar and butter until mixture resembles breadcrumbs. Transfer mixture to a medium bowl. Stir in sultanas and corn flakes, then egg, orange rind and juice.
2. Roll level tablespoons of mixture into balls and place 2cm apart onto a baking paper-lined oven tray.
3. Cook in a moderate oven (180C) for about 12 minutes, or until golden brown. Stand for 5 minutes then transfer to a wire rack to cool.
4. Rock cakes can be served warm or cold.
Rock cakes can be made up to 2 days ahead. They can be frozen for up to 2 months.

i veganized this and used ground flax seeds for the egg. they turned out really delicious. i had never had rock cakes before, but my English hubby says they are perfect. thanks! :)

I tried these with rice bubbles instead of cornflakes, because that's all I had in the cupboard, and they worked really well. The orange flavour really lifts them out of the ordinary!
