Ingredients

  • 3 litres (12-cups) water
  • 1 cinnamon stick
  • 2 star anise
  • 4 whole cloves
  • 1/2 cup soy sauce
  • 1/4 cup kecap manis (sweet soy sauce)
  • 2kg American-style pork spare ribs
  • Boiled rice, chopped fresh coriander and spring onions, to serve

Glaze

  • 1 cup barbecue sauce
  • 1/2 cup plum sauce
  • 1/4 cup honey
  • 1 tblsp sesame oil

Method

1. Place water, cinnamon stick, star anise, cloves, soy sauce and kecap manis in a large, deep saucepan. Add ribs, then bring to boil.

2. Reduce heat slightly and gently boil, uncovered, for 30 minutes.

3. Remove ribs from stock and place in a medium baking dish. Strain stock, reserving 1 cup.

4. To make the glaze, combine all ingredients and 1 cup of reserved stock in a jug.

5. Pour the glaze over ribs in baking dish.

6. Cook, uncovered, in a hot oven (200C), turning ribs occasionally, for 1 hour or until well-browned.

7. Using a sharp knife, cut ribs into portions and brush with glaze in the baking dish.

8. Serve ribs with combined boiled rice, coriander and spring onions.

Notes

American-style pork ribs can be cooked in the stock and kept in the refrigerator overnight. Cook ribs in the glaze just before serving.
