1 To make patties, boil, steam or microwave potatoes until tender. Drain. Place in a large bowl. Mash. Add remaining ingredients. Mix well. Divide mixture into eight equal portions. Shape portions into patties. Refrigerate for about 10 minutes, or until firm.
2 Meanwhile, heat oil in a small saucepan. Add onion. Cook, stirring, until soft. Add tomatoes and sugar. Bring to boil. Simmer for about 5 minutes, or until slightly thickened. Season with salt and pepper. Keep warm.
3 Shallow-fry patties, in batches, in hot oil, until browned on both sides and hot. Remove and drain on absorbent paper.
4 Serve patties with warm tomato sauce and green beans.
