Based on a classic Greek dish, we've used low-fat ricotta in place of feta and have added some basil and parsley for extra flavour.

Ingredients

  • 1 1/2 tbs olive oil
  • 4 clove garlic, crushed
  • 2 whole fresh red chilli, (large red), de-seeded, finely chopped
  • 3 medium tomato, (preferably Roma), de-seeded, finely chopped
  • 24 individual raw/green king prawns without shell, tails intact
  • 1/2 whole chicken stock cube, dissolved in 100ml hot water
  • 1/4 cup fresh parsley, roughly chopped
  • 1/2 cup fresh basil, roughly chopped (plus a few extra leaves to garnish)
  • 6 tbs low-fat ricotta cheese

Method

1. Heat oil in a large non-stick frying pan over medium-high heat. Add garlic and chillies and cook, stirring for 1 minute, or until garlic is golden.

2. Add prawns and cook for 1 minute each side, or until golden. Remove garlic, chilli and prawns from pan and set aside. Place pan back over medium-high heat and add tomatoes, stock and herbs. Season to taste with salt and pepper. Cook, stirring for 5 minutes or until sauce has reduced. Add prawns back to pan and toss well to coat. Dot with ricotta and place under pre-heated grill for 2-3 minutes, or until golden and bubbling.

3. Serve prawns scattered with extra basil leaves and cracked black pepper.
