1. Combine beef with paprika in a medium bowl. Lightly spray with oil.
2. Heat a large non-stick frying pan over medium-high heat. Add half the beef and cook for 2 minutes. Transfer to a bowl. Repeat with remaining beef.
3. Add onion and garlic and cook for about 2 minutes. Add mushrooms and cook, stirring, for about 2 minutes.
4. Return beef to pan along with stock, tomato paste and sauce. Simmer uncovered for 5 minutes.
5. Cook pasta in a large saucepan of boiling salted water, following packet instructions of until tender. Drain.
6. Stir sour cream through beef mixture. Place pasta on serving plates. Spoon over beef. Sprinkle with chives and serve.
